ALOO DUM (or) DUM ALOO

ORIGIN

"ALOO DUM or DUM ALOO" is a popular side dish taken usually with puris,chappathis or parathas in the North India.The word "ALoo" in Hindi means Potato.Since potato is rich in carbohydrates, this dish is good for children.It is quite a heavy lunch.

INGREDIENTS

Potatoes - 300 gms.

Onion - 1/4 kg.

Tomato - 100gm.

Ginger - a small piece

Coriander Leaves - 1/4 Cup.

Garam Masala Powder - 1 tsp.

Salt - to taste

Oil or Ghee - 3 tsp.

Cumin seeds -1/2 tsp.

Red Chilli Powder - 1 tsp.

Dhaniya powder or coriander seeds' powder - 1/2 tsp.

PROCEDURE

Step 1: Boil the potatoes in a pressure cooker for 15 minutes.

Step 2:Peel off the skin and chop the potatoes into small pieces.

Step 3:Now,chop the onions into fine pieces,add coriander leaves, ginger to it.

Step 4:Now,Grind these ingredients together into a thick paste in a mixer-grinder.Keep this mixture aside.

Step 5:Now pour 3 tsps. of oil or ghee in a frying pan and add the coriander seeds to it .When the seeds sputter ,add the grinded paste into the pan and fry until the fresh smell of the onion vanishes.

Step 6:Now add chilli powder,coriander seed powder and garam masala powder into it and fry again.

Step 7:Then,add 1 cup of water to it and add the boiled - peeled - chopped potatoes with salt to taste into the pan and boil till the gravy thickens reasonably.

Step 8:Add coriander leaves to it , and mix well.

Serve hot with chappathis,puris or boiled plain rice ,fried rice or vegetable pulav.

NOTE:
*Boil the potato till becomes soft enough to cut
*Take all the ingredients in the above mentioned quantity only.
*Fry the onion paste till it turns light brown .Donot over burn the paste.
