Curd Rice

ORIGIN

"Curd Rice" is the most popular Indian dish which is healthiest and oil free usually preferred in the TamilNadu state of South India especially during the summer afternoons.Its principal ingredient is curds which rich in yeast and a small amount of fat.

INGREDIENTS

Cooked plain rice - 2 Cups.

Curd - 1 cup.

Milk - 1 cup.

Green chillis -3

Grated ginger - 1 tsp.

Mustard seeds -1/2 tsp.

Oil - 1/2 tsp.

Coriander leaves - 1 tsp.(chopped)

Grated Carrot and Cucumber - 1 cup (together)

Asafoetida - a pinch

salt - to taste

PROCEDURE

Step 1: Take 2 cups of cooked rice and allow it to cool down to room temperature.

Step 2:Now add 1 cup of curds and 1 cup of milk to it and mix well with the rice.Keep the curd rice aside.

Step 3:Heat oil in a frying pan,add mustard seeds to it .

Step 4:Wait until the mustard sputters.Once it sputters,add grated ginger pieces,grated carrot and cucumber,asafoetida to the pan and fry for a minute.

Step 5:Now, add this mixture from the pan to the prepared curd rice.

Step 6:Garnish with coriander leaves and serve chill with pickle.

NOTE:

*Wait until Cooked Rice cools down to room temperature.Mixing hot rice with curd is not good for health.
*Donot fry the ingredients for a long time.
*Please note the quantity of ingredients to be added.
