ORIGIN:

"Milk Kheer" is a popular south indian drink usually prepared on festive occassions or during traditional parties and poojas or celebrations.
Its main ingredient as the name suggests is Milk rich in calcium and fat.It is a healthy and nutritious drink.Diabetic patients stay away!

INGREDIENTS

Milk - 1 litre

Sugar - 1 cup.

Raw rice - 1/2 cup.

Cardamom powder - 1/2 cup.

PROCEDURE

Step 1:Wash the rice in water and drain the water.

Step 2:Now, add 1 cup of milk to the washed rice ,place it in a cooker and cook for 20 minutes.

Step 3:Now,smashed the rice particles in the cooked rice-milk mixture.

Step 4:Now,boil 1 litre of milk until the 1 litre of milk is reduced to 700 gms of milk.

Step 5:Now,add the smashed cooked rice(with milk) mixture to the above boiling milk and boil for 10 minutes.

Step 6:Add 1 cup of sugar to the boiling mixture and boil again for 5 minutes .

Step 7:Add cardamom powder and mix well.

Step 8:Stir well.

Step 9:Serve hot or cold.

NOTE:

*Take all the ingredients in the above mentioned quantity only.

*Keep on stirring well after the sugar is added.

*Use thick milk for preparation .

*Do not refrigerate until the kheer comes down to room temperature.
