Lemon Rice

ORIGIN

"Lemon rice" has the uniqueness of being the traditional as well as modern recipe liked by the younger generation as well.It is one of the most important dishes in South Indian Marriages.Lemon is rich in Vitamin C and therefore it is good for health.But Ulcer patients be away from it as lemon increases acidity in empty stomach.

INGREDIENTS

Cooked Rice - 3 Cups

Small lemon - 2 in nos.

Mustard seeds - 1 tsp.

Bengal Gram - 2 tsps.

Ground nut - 2 tbsps.

Oil - 50 ml.

Asafoetida - a pinch.

Tumeric powder - 1/2 tsp.

Green chillis - 5 in nos.

Salt - to taste.

PROCEDURE

Step 1:Heat the oil in a frying pan.

Step 2:Add mustard seeds,bengal gram,ground nut,chopped green chilli pieces into the pan and fry them in the oil.

Step 3:Then add asafoetida - a pinch and tumeric powder into it and fry for 2 minutes.

Step 4:Now,add cooked rice with salt to taste into the pan and mix well (under heat).

Step 5:Now cut the 2 lemons into two halves each.

Step 6:Then squeeze the half - cut lemons to get the lemon essence into the pan with cooked rice (and all other ingredients together) . switch off the gas stove.

Step 7:Then mix well and serve hot with pappads and raithas.

NOTE:
*Donot over squeeze the lemon as the essence would become bitter then.
*Donot heat for a long time once the lemon essence is added to the cooked rice as this also would turn the lemon rice bitter.
*Take all the ingredients in the above mentioned quantity only.
