Masala Dosa

ORIGIN :
"Masala Dosa" is a popular South Indian tiffin item.It is quite heavy as the masala stuffed in it is made of potatoes(rich in carbohydrates).
It exists from the 19th century.It is easy to make if one knows to make the plain dosas.

DOSA INGREDIENTS

Boiled rice -3 cups.

Raw rice - 1 cup.

Black gram - 1 cup.

Fenu seeds - 1 tsp.

Salt - 2 tsps.

Oil - as and wen needed.

MASALA INGREDIENTS

Potatoes - 1/2 kg.

Onion - 1/2 kg.

Green chillis -6

Tumeric powder - 1/4 tsp.

Mustard seeds - 1/2 tsp.

Oil - 3 tsps.

Salt - 1 tsp.

Lemon juice - 1 tsp.

MASALA PROCEDURE

Step 1:First boil the potatoes (immmerse the potatoes in water) in the cooker for 15 minutes.

Step 2:Peel off the skin after the potatoes are cooked

Step 3:Heat oil in the frying pan and add mustard seeds,tumeric powder and chopped green chillis to the oil in the pan and wait until the mustard sputters.

Step 4:Then add the chopped onions and fry till it turns golden brown (for 10 minutes).

Step 5:Now add 1 cup of water to it and boil .When the water boils add the smashed - cooked potatoes with salt to taste into the pan and cook for 10 minutes till the mixture thickens.

Step 6:Garnish with coriander leaves ,Remove from heat and add pure fresh lemon juice to it (1 tsp.).

Step 7:Mix well

Keep the masala aside

MASALA DOSA PROCEDURE

Step 1:First take all the ingredients except salt and immerse them in water together.

Step 2:Soak the mixture in water for about 4 hours.

Step 3:Then grind the mixture in a wet grinder (add water to it when needed) till it becomes smooth.

Step 4:Keep the grinded flour mixture separately for 3 hours.

Step 5:Donot refridgerate immediately after grinding (can be done after 3 hours).

Step 7:After 3 hours,the flour can be used to make dosas.
Add salt to the flour.

Step 8:mix well

Step 9:Heat the tava ,apply 1 tsp of oil on it and heat for 1 minute.

Step 10:Take 10 tbsps of flour and add to the oiled tava and spread the flour on it to form a circular shape.

Step 11:After one side is cooked , turn the dosa and add 1 tsp of oil to cook the other side.

Step 12:Add 3 tbsps. of masala on this side and spread it ,fold the dosa into half and cook for 30 seconds on both sides.

NOTE:
*Take all the ingredients in the above mentioned quantity only.
*Donot refridgerate immediately after grinding the flours as yeast formation takes about 3 hours.
*Immediately spread the flour on the tava,if you take long toime,it would stick to it.
