Mint Rice (Pudhina Rice)

ORIGIN:
"Pudhina Rice" or Mint Rice is a popular north indian rice.Its main ingredient is mint or pudhina which is rich in iron and fibre.It is good for health as it helps in digestion.

INGREDIENTS

Mint (pudhina ) leaves - 1 bunch

Cooked rice - 2 cups.

Green chillis - 4

Oil - 2 tsps.

Mustard seeds - 1/4 tsps.

Tamarind - 1 tsp.

Salt - 3/4 tsp.

Water - 21/2 cups.

PROCEDURE

Step 1:First of all wash the bunch of mint leaves in clean water and drain the water.

Step 2:Then ,pluck the mint leaves alone from the stems.

Step 3:Then,grind the plucked mint leaves with tamarind and salt in a mixer - grinder to get a thick paste.

Step 4:Add oil to a frying pan and heat it ,add mustard seeds until it sputters ,keep heating.

Step 5:Then,add the grinded paste and fry for 4 minutes.

Step 6:Now,add the cooked rice to the same pan and mix well for 2 minutes.

Step 7:Remove from heat.

Step 8:Serve hot with Raitha.

NOTE:

*Please use the ingredients in the above mentioned quantity only.

*Use fresh mint leaves only.

*Remove the seeds from the tamarind before grinding it in a mixer-grinder.
