Stuffed Bringal Curry

Stuffed Bringal Curry (Stuffed Beingan curry)

ORIGIN

"Stuffed Bringal Curry" is a popular dish in the North India.It can be taken with puris,parathas,chappathis or even with plain boiled rice.It exists from the middle 19th century.

INGRDIENTS

Small sized Bringals - 1/2 kg.

Red Chillis - 8 pieces

Coriander seeds or Daniya - 2 tbsp.

Bengal Gram - 2 tbsp.

Asafoetida - a pinch

Grated coconut - 2 tbsp.

Mustard seeds - 1/2 tsp.

Salt - to taste (1 1/2 tsp.)

Oil - 100 gms.

PROCEDURE

Step 1:Pour 1 tsp. of oil in the frying pan and add red chillis ,daniya ( coriander seeds) ,Bengal gram and grated coconut into the pan and fry till they turn light brown.

Step 2:Grind (wet) the above fried ingredients in a mixer-grinder to make a thick paste.Keep the paste aside.

Step 3:Take each bringal and make half cuts in the four directions to facilitate stuffing.

Step 4:Now each bringal and stuff one teaspoon of the grinded paste into the four sided cuts without spilling or overfilling.

Step 5:Pour 100gms. of oil in the frying pan and heat it .Now, add the stuffed bringal into heated oil in the frying pan and fry carefully in a such way that the stuffing donot come out.

Step 6:Cover the pan with its lid for sometime till the bringal is cooked.

Step 7:Serve hot with plain rice,chappathis or puris.

NOTE:
*Do not overstuff the bringal with masala as it will come out when cooked.
*Do not over cut the bringal.
*Use purple coloured bringal only.
*Take all the ingredients in the above mentioned quantity only.
