Sweet Pongal

Sweet Pongal
(Sakkarai Pongal / Jaggery Rice)

ORIGIN
"Sakkarai Pongal" is a popular dish made for TamilNadu's most popular festival "PONGAL" (celebrated as Mahar Shankranthi in the North India).Its main ingredient is jaggery rich in Iron and therefore is a healthy but heavy food.It exists from the 17th century as PONGAL is a farmer's festival.

INGREDIENTS

Raw Rice - 200gms.

Jaggery - 350 gms.

Ghee - 100 gms.

Cardamom powder - 2 tsps.

Cashewnut - 25 gms.

Cow's milk - one cup

Kismiss - 2 tsps.

Moong Dhal - 1 tsp.

PROCEDURE

Step 1:Place a dry frying pan under heat and fry the raw rice and moong dhal dry in it.

Step 2:Wash the rice in water and drain the water.

Step 3:Then add 600 ml of water and 200 ml of milk to the rice.Add moong dhal also to it.

Step 4:Keep this in the pressure cooker and heat for 25 minutes.(add the cooker weight to the cooker).

Step 5:Boil the 350 gms of jaggery in one cup of water.

Step 6:Once the rice with moong dhal is cooked , add the cooked mixture to the boiling jaggery water and mix well under heat for 5 minutes.

Step 7:Now add 100 gms of ghee,kismiss and cardamom powder to the mixture and remove from heat.

Step 8:Mix well.

Serve hot with ghee.

NOTE:

*Donot forget to put the weight on the cooker top.
*Take all the ingredients in the above mentioned quantity only.
*After heating the cooker for 25 minutes,donot open the cooker immediately.Wait for 15 minutes and then open ,otherwise the cooker would burst open.
*Donot add too much or too little of water.(Rice would not be cooked properly then).
