Vegetable kofta
(vegetable kabab)

ORIGIN:

"Vegetable kofta" (vegetable kabab) is a popular north indian side dish usually taken with chappathis,puris,or plain rice.It is quite a heavy lunch or dinner item.Its main ingredient is bottle guard and onions which are good for health.It exists from the eighteenth century.

INGREDIENTS

Bottle guard - 1/4 kg.

Bengal gram flour -1 cup.

Oil - 200 gms.

Onion -1/4 kg.

Ginger - 1 piece

Red chilli powder - 1 tsp.

Salt - 3/4 tsp.

Coriander leaves -1/2 cup.

Tomatoes - 1/4 kg.

Garam masala powder -1 tsp.

PROCEDURE

Step 1:First of all chop the onions and tomatoes into small pieces.

Step 2:Then,heat 1 tsp. of oil to the chopped onions and tomatoes ,mix them together and fry in a pan for 5 minutes.

Step 3:Now,chop the ginger ,coriander leaves ,then add grind the fried onion-tomato mixture with these in a mixer-grinder to get a thick paste.

Step 4:Now,fry the paste in a frying pan using oil ,add salt and garam masala powder to the pan and mix well.

Step 5:Fry for minutes and then add 2 cups of water to it and fry again for 5 minutes.

Step 6:Remove the gravy from heat.

Step 7:Now,grate the bottle guard with a vegetable grater.

Step 8:Mix the grated guard with red chilli powder and bengal gram flour.

Step 9:Size this mixture into small lemon-sized balls and deep fry these balls in oil.

Step 10:Now add the fried balls into the gravy prepared above .

Step 11:Thus the vegetable kofta is ready to be served.

Step 12:Serve hot with chappathis,puris or plain rice.

NOTE:

*Take all the ingredients in the above mentioned quantity only.

*Do not add water to the bottle guard - bengal gram flour mixture as bottle guard itself is rich in water content.

*Prepare all the frying items on low flame.
